Gr 7 Up–Bakers of any age who are apprehensive about bread baking can find everything they need in this volume. Rather than dive right in to actual bread recipes, the book first walks would-be bakers through 45 pages of fundamentals, including tips for kid bakers and adult assistants, a discussion on yeast and baking science, tools, sourdough information, and troubleshooting tips. Each recipe includes a difficulty rating from beginner to advanced, time estimates “from start of mixing to baked bread” (which is essential to know when undertaking a multistep bread recipe), the required baking vessel, and whether a mixer is needed. A photograph of the finished product accompanies every recipe. Some more complicated recipes include photos of preliminary steps, but typically intermediate steps like pressing tortillas or braiding focaccia are shown with illustrations. While the recipe section is extensive, featuring over 20 breads, it is not organized in any noticeable way (course, cuisine, difficulty, etc.). Additional supplemental materials cover information on baker’s math, a glossary, and formulas.
